220090 Brewing. A history of science, technology, and education (19th – 20th centuries) (S) (SoSe 2023)

The craft of beer brewing has changed dramatically in modernity through the advent of sciences as well as by industrialization and urbanization. In turn, the field provides an opportunity to introduce central topics of the history of the (life) sciences and technology at a concrete case. To understand the transformation in the manufacture of an important staple and commodity, this class will focus on the mid-19th century debates on fermentation between chemistry and biology, the rise of an ideal of purity since the late 19th and the ensuing industrialization of brewing in Europe until 1914. Here, social and economic developments at large were entangled with microbiology, genetics and evolutionary theory. Finally, we will explore in how far the history of brewing serves as a case in point for educating about science.
