Im Theorieteil dieser Veranstaltung werden die Grundlagen des Brauereiwesens behandelt. Beginnend mit den Rohstoffen Wasser, Malz und Hopfen wird auf die Vorbereitung dieser für den Brauprozess, wichtige Qualitätsmerkmale und detaillierte Anwendung eingegangen. Im Anschluss werden die Schritte des Brauprozesses auf Basis der lebensmitteltechnischen Anwendung und der biochemischen und physikalischen Hintergründe der einzelnen Prozessabschnitte bearbeitet. Des Weiteren werden verschiedene lebensmitteltechnischen Erzeugnisse im Hinblick auf industrielle Relevanz vorgestellt und den Studierenden ein Überblick über die Geschichte und die verschiedenen Erscheinungsformen moderner alkoholischer Getränke vermittelt. Abschließend werden die rechtlichen Hintergründe der Bierproduktion und des Bierverkaufs behandelt, sowie durch externe Vorträge ein Einblick in den Produktionsalltag einer Start-Up Brauerei und einer Industriebrauerei gewährt.
