Professor Orjuela-Grimm is a guest lecturer at the Faculty of Sociology in summer semester 2022.
Food Security reflects a social determinant with far ranging impacts on health including nutrition.
In the first part of the course, we will examine the definitions of food security including the
dimensions as defined by the leading national and international organizations who have created
strategies to monitor food security at populational levels. We will also review literature regarding
food security in various population segments including migrants and immigrants. We will review
health impacts of food security and consider the role of food security as a social determinant of
health.
The second part of the course will focus on understanding (and applying) tools for measuring
food security considering elements of the lived experience of food acquisition and preparation.
The class will first review and learn how to apply the most widely used instruments for measuring
food security as well as instruments for measuring diet and food intake.
Students will have an opportunity to examine data sets that include data on food security
collected with some of the most widely used instruments and will have the opportunity to
examine the different components used in measuring food security and how they may relate to
demographic and health characteristics in these national level data sets.
This seminar will be taught completely in English.
Students should be willing to prepare for class meetings by reading the assigned readings,
completing brief assignments or reflections (for some sessions), and to participate actively in the
discussions.

This class is designed for students interested in food security, in quantitative and mixed methods research on social determinants of health, human rights, international development, dietary practices and nutrition.

In cases where a module description mentions more than one kind of assignment, the respective member of the teaching staff will decide which task(s) they assign the students.
Active participation / Studienleistung (4 credit points):
Active discussion in class sessions.
Completion of brief assignments such as using datasets or reflections.
Students will design a small research project that focuses on measuring food security in a group/ population (after discussing their potential topics with the course instructor)
presented as a proposal application for funding
present their proposal (using powerpoint and including a simplified budget) to the class (week 9).
The proposal will include justification for the population and instrument chosen and rationale for examining food security as a key component of their proposal
Justification can / should include consideration of need for qualitative or pilot components.
Presentations can be by teams of one or two students (ideal) .
Assignment: Marked term paper / Prüfungsleistung (6 credit points):
Term paper, about 20 pages, (double space) written by each student
focus on the justification for the research project they proposed (after agreement with the course instructor) including a comprehensive literature review
option to include (as part of their paper) preliminary data (with basic quantitative analysis, descriptive) justifying their proposed approach. Term paper evaluation is contingent on active participation in class sessions. Without active participation in all class sessions, work is not fully evaluable.
