Ziel dieser Veranstaltung ist die Planung und Durchführung eines Fermentationsprozesses mit Saccharomyces cerevisiae. Im Rahmen der Veranstaltung sollen im zugehörigen Seminar ein Brauprozess von der Maische bis zur Abfüllung geplant und modelliert werden.
Jeder Teilnehmer muss im Rahmen des Seminars einen Vortrag über einen verfahrenstechnischen Teilaspekt des Brauereiwesens halten. Parallel hierzu soll der vorher erarbeitete Prozess in der Praxis durchgeführt und analysiert werden.
